Avocado Toast with Poached Egg

Ingredients:

2 slices of whole grain bread

1 ripe avocado

2 eggs

Salt and pepper to taste


Optional toppings: sliced tomatoes, microgreens, red pepper flakes, or hot sauce


Instructions:

Toast the slices of whole grain bread until golden brown.

While the bread is toasting, prepare the avocado by slicing it in half, removing the pit, and scooping the flesh into a bowl. Mash the avocado with a fork until smooth.

Bring a pot of water to a gentle simmer. Crack the eggs into separate small bowls or ramekins.


Carefully slide each egg into the simmering water. Cook for about 3-4 minutes for a soft poached egg or longer if desired.


While the eggs are poaching, spread the mashed avocado evenly onto the toasted bread slices.

Once the eggs are cooked to your liking, use a slotted spoon to remove them from the water and place them on top of the avocado toast.


Season with salt and pepper to taste, and add any optional toppings of your choice.

Serve immediately and enjoy your delicious and nutritious avocado toast with poached egg!
